Each course will be prepared by guest Chef Tim Saenz, who has been cooking professionally for 15 years. Upon relocating to San Diego at the age of 20, he inserted himself into the local food scene gaining employment opportunities at Hilton San Diego Gaslamp Quarters, The U.S. Grant Hotel, California Modern of George’s at the Cove, Mille Fleurs, Herringbone of La Jolla, Cal a Vie Health Spa and Resort, and many more respected establishments.

Chef Tim Saenz apprenticed under a collective of successful chefs including Chef Curtis Cooke of the Chef de Cuisine Association of San Diego Education Foundation, Lake Havasu Top Chef Award Winner Will Anderson, Two-Star Michelin Chef Martin Woesle, Misen Chef Vazgen Bagdasarov, and now currently Chef Josh Kemble at Harvest Kitchen Catering. At the age of 22, Chef Tim Saenz embarked on a two-month self-proclaimed “food pilgrimage” through the Iberian Peninsula where he practiced traditional culinary methods and studied Old Word winemaking in parts of Spain, Italy, and Portugal. Now Chef Tim Saenz shares his culinary vision for private patrons and pop-up collaborations as well as interns for local winemakers with whom he builds long-standing relationships.
